Sweet Potato Chips

If any of you are like me and love snacks of course during a football, basketball or baseball game but then hate how you feel afterward due to all the sugar or processed foods, well I have a treat for you. I made these the other day for the Purdue Basketball game and I will definitely find myself making them again for the Super Bowl this coming weekend. They are a great snack to take over to your friends for occasions like this while still staying on the health train.

They are very easy to make and only take 3 ingredients unless you want to make your own guacamole. The three ingredients are just as the name says:

  • Sweet Potato
  • Bacon
  • Guacamole

How to Make it:

  1. Place a pan in your oven and preheat oven to 425 degrees F. Place over pan a sheet of aluminum foil and spread light layer of oil. Slice potatoes into small cross-section slices about 1/2 to 1/4 inch. Arrange slices in a single layer on the oiled sheets, then spread oil across the tops of the sweet potato slices. Sprinkle a pinch of salt and black pepper. Roast for 20-25 minutes, until golden brown underneath, rotating the pans 180 degrees. Flip, then roast for an additional 8 minutes.
  2. While this is cooking prepare guacamole, either make your own style or use a store bought version.
  3. Fry bacon in a large skillet over medium heat. Once cooked blot away the extra grease from the bacon. When cool enough to handle, cut the bacon into small pieces. Then mix the cut bacon pieces in with the guacamole.
  4. Once the sweet potato has baked, top each with a scoop of the guacamole and bacon mixture. Serve warm or at room temperature.
